These fudgy coconut oil brownies are so delicious! One of my favorite treats of all times is a good, hot brownie right out of the oven, but when I learned I could made them a smidgen healthier than the regular brownie by substituting coconut oil for vegetable oil, I was all over it! That’s my favorite thing to do. Make things just a tad bit healthier. Coconut oil is so good for you so by just doing this one simple thing, you really are making your brownies a more guilt-free 🙂
I don’t think anyone can justify that brownies are healthy, but if you’re going to have them, just use a better oil than vegetable oil! I hope you don’t have any in your cupboard because it is basically toxic. Please replace your vegetable oil with coconut oil, avocado oil and extra virgin olive oil. Your heart will thank me later 🙂

Just get your favorite box of brownies, follow the directions, and just use coconut oil instead of vegetable. It’s that easy!
Bake according to directions, cut & serve with a delicious scoop of ice cream! You will be surprised that there is just a hint of coconut flavor that gives a great dimension to the dish. If you don’t love the coconut taste, you can use a fractionated liquid coconut oil that doesn’t have any flavor. You have to try it and let us know what you think!
