Chocolate Chunk Coconut Cookies

We absolutely love these and they are definitely a healthier version of a chocolate chip cookie with some delicious coconut flavor to add to it! ¬†Using chocolate chunks instead of chips is a fun way to change up a cookie too, but it definitely makes them a little more ooey gooey, which, is that really a bad thing?! ūüôā

  1. Preheat the oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl or bowl of a stand mixer add the oatmeal, flour, coconut sugar, sugar, baking soda, salt, canola oil, coconut oil, eggs, and vanilla.  Beat until the dough is moist and all the ingredients are combined. Mix in the chocolate chunks and shredded coconut.
  4. Using your hands clump together a tablespoon of dough. Use you hands to really squeeze the dough into a ball. ¬†If the dough is dry, you can add a couple tablespoons of coconut milk or oil if needed. ¬†Place onto the prepared baking sheet. If your balls are a little crumbly don’t worry, they will come together while baking. Repeat with remaining dough.
  5. Bake for 8-10 minutes or until set and golden. These are best right out of the oven, so just go for it and share some with your neighbors!

Notes

You can swap out dark chocolate chips for milk chocolate or even cranberries or nuts if chocolate isn’t your thing!
