This “Almost all wheat” Waffle & Pancake Mix is the perfect solution for those kiddos (and adults) who love white pancakes and waffles but you’re wanting to transition them into more whole grains! I am a big believer in transitioning a family slowly into whole grains, and this is the way to go in the pancake & waffle arena! There is a big taste and texture difference so let’s do it slowly…
Before I knew better, I used to feed my kids Krusteaz all white flour pancake mix all the time. It was easy and convenient, but when I realized it was like feeding my kid sugared cereal or a donut every day for breakfast with all of the refined flour and tons of sugary syrup on top, I knew I needed to change something.
KRUSTEAZ: NO MORE!!
It isn’t easy transitioning your family to more whole grains, but this pancake mix is a perfect way to start trying! It’s super simple to make and it only takes about 10 minutes of your day. I like to make a double batch and store it in the large Rubbermaid cereal air-tight containers so that it’s ready to go for those quick school morning breakfasts. I also put a tape laminated recipe card on the front so when the mix is gone, anyone can make it and refill the container. Let’s be honest, it’s usually me, but if you needed an extra chore for someone to do, they could do it! I double the batch of the recipe to fill this whole container because I have a large family!
To make the mix, just simply combine in a bowl:
- 5 c. whole white wheat flour
- 3 c. unbleached all purpose flour
- 1/2 c. organic evaporated cane sugar
- 2 1/2 T. aluminum-free baking powder
- 4 t. baking soda
- 4 t. sea salt or Redmonds real salt
Stir to combine & dump into an air-tight container.
When you’re reading to make pancakes or waffles, just follow these simple instructions:
In small bowl, combine 1 c. milk, 1 egg, and 1 Tbsp. of oil and whisk to combine. (For waffles, add 2 Tbsp. oil)
Add 1 cup of dry pancake mix and whisk until just combined.
Let sit for a couple minutes
Pour onto a hot griddle and cook to perfection! Because I have a large family, we use the Cuisinart Double Belgium Waffle Maker. It’s truly amazing and feeds a large crowd fast!! I love that it heats up quickly (I turn it on and have it heat while I make up the batter), and it also cooks quickly. And because it can cook two at a time, I can hardly keep up with it as I am cooking waffles or wafflets. It’s so awesome!!
I also like to use Trader Joe’s Coconut Oil Spray. It’s a healthier oil & can stand higher heats.
OK I have to be honest, I had to laugh when I went to pour my cup of pancake mix into the bowl for the picture and all of the mix came crashing out of the container, leaving me with a nice mess of excessive pancake mix everywhere! That’s what you get when you try to take a picture and pour pancake mix at the same time! ha ha The joys of being a blogger 🙂 Let’s just say it doesn’t always go as planned!
I think you will love this mix! If it seems like it’s a little too whole grain for you at first, then try making it with one more cup of white flour and one less of wheat flour. Just find the right combination for your family and then slowly increase the wheat flour and decrease the white! Just make sure you keep the same number of cups of flour so the baking soda and salt will be in the right proportion as well!
For another whole grain recipe, try our blender pancakes. They are fast as easy as well and they are made with the whole grain! I love making them with Kamut! It’s an ancient grain that hasn’t been genetically modified and it has a very light flavor to it. Even those picky eaters who love white will usually go for it! Give it a try! They are one of my favorites!
If you have never tried our Coconut Buttermilk Syrup, you might want to give this one a try. It’s the traditional buttermilk syrup, but we have replaced half the butter with half coconut oil to give it a little healthier portion of a good fat and then we reduced the sugar a little as well. Try it out and let us know what you think. We absolutely love it!!
I like to serve these waffles with fresh fruit & a tiny drizzle of this syrup. You don’t need much because it still is very sweet, but it’s so delicious!

This “Almost All Wheat” Waffle & Pancake Mix is the perfect solution to helping your kids transition from all white pancakes to wheat pancakes. I like to make a double batch and store it in a large cereal container, but any air-tight container will work.
Ingredients
- 5 c. whole wheat flour
- 3 c. unbleached all-purpose flour
- 1/2 c. organic evaporated cane sugar
- 2 1/2 T. aluminum-free baking powder
- 4 t. baking soda
- 4 t. sea salt or Redmond’s real salt
Instructions
- Combine all ingredients in a bowl and mix until well combined. You don’t want clumps of baking soda or salt anywhere in there!
- Pour into an air-tight container. I like to use the large cereal containers to keep it on the shelf.
- When ready to make the mix, just combine 1 c. milk, 1 egg, 1 c. mix. For pancakes, add 1 Tbsp. oil and for waffles, add 2 Tbsp. oil.
- Stir until combined pour onto a hot skillet to make pancakes, or a hot waffle iron. Because I have a large family, we love using our Cuisinart double belgium waffle maker. It feeds a large crowd, fast!! Click here to check it out!
Notes
- I like to tape my recipe to the container so it’s super easy to make and refill every time we use it all up!
- I double this batch because I have such a large family, but just a single batch will work for most! Just start using it and see how fast you go through it and then decide how much you need.
- If you don’t grind your own wheat (most don’t), I recommend using non-bromated flours like Bob’s Red Mill, King Arthur or Wheat Montana. They are all non-GMO and are good wheat brands to buy.
